Here’s a luscious Strawberry Cheesecake recipe — smooth, creamy, and topped with a fresh strawberry glaze. Perfect for spring gatherings or whenever you’re craving a crowd-pleasing dessert.


🍓 Strawberry Cheesecake

Crust Ingredients

  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup sugar

  • 1/3 cup butter, melted

Cheesecake Filling

  • 3 (8 oz) packages cream cheese, softened

  • 1 cup sugar

  • 1 tsp vanilla extract

  • 3 large eggs

  • 1/2 cup sour cream

  • 1/4 cup heavy cream

Strawberry Topping

  • 2 cups fresh strawberries, hulled and sliced

  • 1/2 cup sugar

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch + 2 tbsp water (slurry)


🥣 Instructions

1. Make the Crust:

  • Preheat oven to 325°F (160°C).

  • Mix graham cracker crumbs, sugar, and melted butter.

  • Press into the bottom of a 9-inch springform pan.

  • Bake for 10 minutes, then cool.

2. Make the Filling:

  • Beat cream cheese until smooth.

  • Add sugar and vanilla; mix well.

  • Add eggs one at a time, beating after each.

  • Mix in sour cream and heavy cream until smooth.

  • Pour over crust.

3. Bake the Cheesecake:

  • Bake at 325°F for 50–60 minutes or until center is almost set.

  • Turn off oven, crack the door, and let cheesecake sit 1 hour.

  • Chill for at least 4 hours or overnight.

4. Make the Strawberry Topping:

  • In a saucepan, combine strawberries, sugar, and lemon juice.

  • Bring to a simmer; mash some berries.

  • Stir in cornstarch slurry and simmer 2–3 minutes until thickened.

  • Cool completely before spreading over cheesecake.
