Here’s a Delicious Keto Cookie recipe that’s low in carbs, high in flavor, and super easy to make:


🍪 Delicious Keto Almond Butter Cookies

Ingredients (makes about 12 cookies)

  • 1 cup almond butter (unsweetened, no added sugar)

  • 1/2 cup granular erythritol or monk fruit sweetener

  • 1 large egg

  • 1/2 tsp baking soda

  • 1 tsp vanilla extract

  • Optional: 1/4 cup sugar-free dark chocolate chips or chopped pecans


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a medium bowl, combine almond butter, sweetener, egg, baking soda, and vanilla extract. Mix until smooth.

  3. Fold in optional chocolate chips or nuts if using.

  4. Scoop tablespoon-sized portions onto the baking sheet. Flatten slightly with a fork.

  5. Bake for 8–10 minutes, until edges are set and tops begin to crack slightly.

  6. Let cool on the baking sheet for 5–10 minutes before transferring to a rack. They firm up as they cool!
